currently pioneers in the market for certified organic sweetened con- densed milk, as well as for Fairtrade- licensed condensed milk. When using vegetable fats in the new recipes, the procurement of sustainably produced raw materials is a particularly impor- tant criterion; here the company uses RSPO-certified palm oil, for example. As a central organization, RSPO (Roundta- ble on Sustainable Palm Oil) promotes sustainable cultivation methods for palm oil in the producing countries and has defined a number of principles and criteria that must be met for sustaina- ble palm oil production.
The fundamental trends of recent years such as vegetarian and vegan products, products with organic seals, clean labels or foods for certain religious groups that, for example, comply with the rules for Halal or Kosher, are increasingly in demand from today's very informed consumers. This me- ans that the need for suitable ingredients is growing at the same time among the food and confectionery manufacturers in order to be able to develop these new product qualities.
“On the one hand, we are noticing a strong increase in demand for certified varieties such as organic and / or fair trade, as well as halal and kosher. And
completely new products are being added, such as sweetened condensed milk with added vegetable fat, purely vegetable alternatives without milk or replacing the sugar with certain sugar substitutes. ”, says Johannes Rother, Managing Director of WS Warmsener Specialties GmbH, as he describes the changing requirements on the part of the company of its customers. The company responded by developing new varieties and also had its products certified for various seals in order to meet these new requirements.
