A treasure trove for Vegan bakers
‘Vegan baking is easy and wor- thwhile’ unveils the new ‘Vegan Guide for Bakeries’, a publication by the Albert Schweitzer Foundation for our environment in collaboration with master baker and confectioner Tho- mas Backenstos from the Akademie Deutsches Bäckerhandwerk Südwest e. V. With many practical tips, and tried and tested recipes, the publica- tion is a treasure trove for professional bakers who want to add animal-free baked goods to their range and make
their products more sustainable.
The Vegan way of life is getting po- pular as more and more people are reducing their consumption of ani- mal products. The demand for purely plant-based baked goods is growing accordingly. But mostly sweet particles and cakes contain eggs, butter, milk, honey or other animal ingredients. The vegan guide for bakeries shows in detail which alternative ingredients are available and also includes some recipes. In addition, bakeries will find valuable tips in the guide for success- ful marketing of vegan products as

well as inspiring practical examples from colleagues. The most important arguments for a vegan diet round off the informative overall package.
"It is a great opportunity for bake- ries to tap into the ever-growing target group of people who want to eat less or no animal products. Many types of bread and rolls can do without these ingredients anyway. With the help of the practical guide, alternatives can also be found for the pastry and cake range." said Backenstos.
Robin Rader, project manager at the Albert Schweitzer Foundation, adds: “Many people think that it is compli- cated and expensive to bake vegan. We show that the opposite is the case: you can often get along with fewer in- gredients than vegan, which are also often cheaper than animal products. Nothing stands in the way of a profit for enjoyment, sales, health and the environment. "

Developed by the master vegan chef, the new ‘Vegan Guide for Bakeries’, gives bakers information on motivating their customers, expanding their vegan range, presents most common alternatives, lists out the industry's best practices, marketing and communication tips, and last but not the least, some inspiring vegan recipe ideas.
